Planning an Outdoor Kitchen Under Your Pergola

An outdoor kitchen transforms your pergola from a covered area into a genuine living space. An attached pergola works particularly well, giving direct access from your indoor kitchen. Here's what to consider.

Essential Appliances

  • BBQ: Built-in or freestanding, gas or charcoal
  • Sink: Essential for food prep and cleanup
  • Refrigeration: Bar fridge or full-sized outdoor fridge

  • Pizza oven: Weber, Ooni, or built-in wood-fired
  • Rangehood: For proper ventilation (some councils require this)
  • Side burner/wok: For Asian cooking
  • Smoker: For serious BBQ enthusiasts
  • Ice maker: Bar-style entertaining

Choosing Your Cooktop

This is the decision that shapes everything else, and most people make it last. Cooking under a roof isn't the same as cooking in the open, so the cooktop you pick changes your ventilation, your clearances, and your roof material.

Open Grill vs Flat Plate

An open grill drips fat straight onto the burners or coals. That's what causes flare-up, and flare-up under a roof puts smoke and grease onto your ceiling lining. It shows up as staining, and it's worst on the lighter Colorbond colours.

A solid flat plate (a hotplate, or what the American brands call a griddle) contains the fat instead of dropping it. Less flare-up, less smoke, and much better suited to a covered area. It also handles what most people actually cook when they're entertaining: eggs and bacon in the morning, onions, prawns, stir fry.

For most clients the answer is both. If you're running a Weber Q as your cooktop, you don't need a second barbecue to get there. A cast iron griddle plate for the Weber Q sits straight onto the existing grate, so you can run flat plate for a covered cook-up and swap back to the grill when you're out from under the roof.

Built-In vs Freestanding

Built-in looks better and gives you continuous bench space, but it commits you. Once cabinetry is around it, replacing a failed unit in eight years means cutting stone. Freestanding costs less, is easier to service, and lets you wheel the unit out from under the pergola on a still day if you want to cook something smoky.

Heat Clearance

Check the clearance your barbecue's manufacturer specifies to combustible material above the unit, and treat that figure as a minimum rather than a target. Built-in units generally want more headroom than people expect, and a low roof over a high-output burner is expensive to fix once the structure is up. If your roof height is already fixed, let that constraint drive the appliance you choose rather than the other way around.

Size Planning

Minimum 4m x 3m for basic setup. For proper entertaining, plan 5m x 4m or larger.

Council Requirements

Many councils require:

  • Plumbing permits
  • Gas compliance
  • Rangehood for enclosed structures
  • Minimum distances from boundaries
